Butternut Squash Puff

Wonderful butternut squash casserole. Mashed butternut squash is mixed with eggs, orange and lemon rinds, eggs, flour, sugar, salt and pepper. Casserole is baked until set. Terrific every night of the week dish.
Ingredients -
3 cups Butternut Squash, cooked and mashed
2 Eggs, beaten
1/4 cup Half-and-Half
2 tablespoons Butter, melted
1 tablespoon Orange Rind
1/2 teaspoon grated Lemon Rind
2 tablespoons All-Purpose Flour
1 tablespoon Sugar
1/4 teaspoon Salt
1/8 teaspoon Pepper
 
Preparation:

1. Preheat oven to 350 F.

2. Add cooked butternut squash, eggs, half-and-half, orange rind, lemon rind, all-purpose flour, sugar, salt and pepper to large bowl. Stir to combine.

3. Spoon squash mixture into large buttered casserole dish.

4. Place casserole dish into baking pan. Add ½” water to baking pan.

5. Bake 50 minutes until set.

Half-and-Half
You could substitute milk for the half-and-half, if readily available,
